Three Olive's Bar, Patio And Grills is a cosy restaurant located opposite the football ground in Duler, Mapusa. Opened just three months ago, this establishment is the realisation of Elly Desouza's long-held dream to create a place that celebrates Goan culture and flavours.
“I had the idea of Three Olive's for a long time,” Elly shares. “I used to work on ships, and around 2008, I considered starting something like this. But things got delayed. Still, it was always on my mind.” The vision stayed with him until he finally turned it into reality.
The name 'Three Olive's' holds special significance for Elly. It represents his three daughters—Zia, Zene, and Zuri—and also refers to the three olives traditionally used in a martini. This blend of personal meaning and tradition makes the name distinctive and memorable.
Elly’s wife, Jesslyn Desouza, and his mother, Josephine Desouza, have been instrumental in bringing this vision to life. “We had wanted to open a restaurant for a long time,” Elly says. “When we renovated this place, we thought, why not turn it into a restaurant and highlight Goan culture?”
The restaurant’s menu offers a variety of Goan, continental, and Indian dishes. “We’re aiming to give it a Goan touch,” Elly says. “We want to involve locals and introduce them to different flavours. We’re also incorporating local beverages and cocktails, like feni-based drinks, to revive Goan traditions. With our special curated menu and cocktails, ‘Viva la Goa’, we want to rejuvenate our Goan tradition.” The fusion of traditional and modern flavours is what makes their menu stand out.
The restaurant also features the family-run washing centre next to it, a unique concept that has proven beneficial. “We get a lot of business from people who visit the washing centre, especially during lunch,” Elly notes. “It’s like free advertising; they hear about the restaurant and often return in the evening.” This innovative approach has helped attract and retain customers.
Among the popular offerings at the restaurant are their sizzlers and thalis, which have quickly become customer favourites. “Our sizzlers are doing really well, and the thalis are especially popular during lunchtime,” Elly mentions. The restaurant also hosts karaoke sessions on Wednesdays and live music on Saturdays, adding to its lively atmosphere.
Family involvement has been key to the success of the place. “My mom and my wife have been a tremendous support,” Elly says. “They’ve helped transform the place, from selecting colours to adding personal touches.” This family effort is reflected in the warm, welcoming ambience of the restaurant.
Starting a new business is never without its challenges. “Every day presents a new challenge,” Elly admits. “But it’s all about passion. If you have the passion, the money will follow.” Despite the hurdles, Elly remains optimistic and driven.
Looking ahead, Elly hopes to expand Three Olive's Bar, Patio And Grills. “For now, we just want to keep running smoothly. Maybe one day, we’ll open more branches,” he says. The dream of expansion is proof of the positive response and growth they have experienced so far.
The feedback from customers has been overwhelmingly positive. “Many customers appreciate that we haven’t demolished the house,” Elly says. “Maintaining these old Goan houses is a challenge, but it’s worth it for the passion and heritage they represent.” This commitment to preserving Goan architecture and culture has earned the restaurants a special place in the hearts of its patrons.
In just a few months, Elly has turned his vision into a welcoming space where locals and visitors can experience the warmth of Goa through its flavours and traditions.
